Probably the most widely recognised vehicle in this category is LVT and its variants. Its a vehicle which is synonymous with the Pacific Theatre, although it obviously saw much use elsewhere.

Possibly the next most well known such vehicle is the DUWK.



My dad had the dubious pleasure (so he said) of driving one of these during the Italian Campaign, ferrying  25lbr artillery ammo across the Straights of Messina. he said it was quite un-nerving as when loaded, there was very little freeboard.

The M29 Weasel, on the other hand, was very useful. I recently read a book about the Hurtgen Forrest operation, where on many occasions, the Weasel was the only vehicle that was able to negotiate the narrow, very muddy trails in order to resupply units and evacuate casualties.
